Fruit tea bread details
INGREDIENTS:Makes 1 loaf 23 x 11 cm
380g high protein/ bread flour
60g brown sugar
Pinch of salt
1/4 tsp all spice (optional)
6g instant yeasts
2 tsp bread improver
185ml warm milk
60g butter, melted and cooled
135g mixed fruits
15g mixed peels
Glaze:
50g milk
2tbsp castor sugar
METHOD:
- Soak mixed fruits and peels in water for about 30 minutes or until fruits and peels are soft. Drain well to remove excess water.
- Combine flour, brown sugar, salt, all-spice, instant yeasts and bread improver in a mixing bowl. Use dough hook of your heavy duty mixer (like Kenwood and Kitchenaid) to slightly mix the dry ingredients at low speed.
- Add milk gradually and continue to knead until the surface of dough looks smooth .
- Add melted butter gradually. Use medium-slow speed to continue kneading for about 10-12 minutes until the dough is elastic, smooth and non-sticky. To test doneness, stretch a pinch of dough. This dough should form a thin membrane before it breaks .
