Fruit strada recipe details
- Ingredients
- 1 whole loaf French or Italian bread (soft crust, cut in cubes)
- One or two 8-ounce packages light cream cheese (I use 1 package)
- One 12-ounce package frozen berries (strawberries, raspberries, blueberries, and blackberries)
- 12 eggs or Egg Beatersegg substitute
- 1/3 cup real maple syrup
- 3 cups skim milk, soy milk, or rice milk
- Syrup:
- 2 Tablespoons cornstarch or arrowroot
- 1 cup water
- 3/4 cup sugar or less
- 1/2 to 1 Tablespoon butter
Reserve 1/2 cup of berries for syrup. Layer half of bread, all cream cheese, and remaining berries. Add rest of bread. Mix milk, maple syrup, and eggs/egg substitute and pour over top. Let sit overnight. Bake at 350 for 1 hour or convection bake at 325 degrees for 45 minutes. Knife should come out clean.
Syrup:Mix cornstarch/arrowroot with some of water. Put remaining water, sugar, butter, and fruit in saucepan and stir over medium heat until boiling. Slowly add cornstarch or arrowroot mixture, stirring all the time. Sauce will thicken in a few minutes. Spoon over top of casserole and enjoy!
Serve with sausages if you wish. Start meal off with baked pears since oven is on for strada anyway.
