Fruit oatmeal recipe details
- Ingredients:
- 2 cups fruit (fresh or frozen) a mixture of sliced peaches, cantaloupe balls, honeydew balls, and blackberries.
- 1 cup fruit juice (from defrosting frozen fruit or orange or peach juice).
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground allspice
- 1 Tablespoon pure vanilla
- 1 Tablespoon Peach Schnapps
- 1 cup old-fashioned oats
- 1/2 cup brown sugar
- 1/4 cup margarine
- 2 Tablespoons flour

Place fruit in clear oven-proof dish, sprayed with vegetable spray. Set aside. Stir fruit juice, cinnamon, coriander, allspice, vanilla and schnapps until blended and pour over fruit.
In another bowl, cut sugar, butter, and flour into oats with a fork. Press this mixture firmly into center of fruit with back of spoon. Leave about 1 inch around sides uncovered. Bake uncovered at 350 degrees for 30 to 40 minutes or until center is set and fruit along sides bubbles over.
Serves:8. Serve hot.Note: May be assembled night before. Doubles well. Freeze one batch for future baking. Reheats well in microwave (add a little more juice before reheating).
