Ingredients
For the topping: | |
2 glass(es) | cowberries, 175g each |
1 large can(s) | apricot halves, 240g |
1 large can(s) | pineapples, in pieces, 340g |
For the dough: | |
375 g | flour |
1 packet(s) | baking powder |
300 g | sugar |
1 tsp | vanilla extract |
3 | eggs |
200 ml | milk |
For the glaze: | |
4 tbsp | pineapple jam, alternatively: apricot jam |
1 tbsp | water |
Instructions
Preheat the oven to 180°C.Drain the fruit, each in a separate sieve. Halve the apricot halves.
In a bowl, mix together all ingredients for the dough until smooth. Spoon the dough on a lined and greased baking tray (30*40 cm) and flatten. Layer the cowberries on the dough, then the pineapple pieces and finish with the apricots. Bake in the preheated oven for approximately 30 minutes.
Transfer the baking tray on a wire rack. Brush the jam through a sieve, add the water, heat stirring until smooth and spread the jam on the cake. Allow to cool completely, then serve.
