This is a fantastic frozen treat that is easy to prepare, is a great after dinner desert or summertime snack, yet elegant enough to serve at a dinner party. Snickers(R) bars, Heath(R) bars or chocolate mints are an excellent substitute for the toasted coconut.

Ingredients
Serves: 8- 1 pint lime sherbet
- 1 pint lemon sherbet
- 1 pint vanilla frozen yogurt
- 1 1/4 cups graham cracker crumbs
- 2 tablespoons sugar
- 1/4 cup melted butter
- 1 tablespoon fresh lime juice
- 1/4 cup toasted coconut
Preparation method
Prep: 4 hours 30 mins | Cook: 5 mins1. Preheat oven to 350 degrees F (175 degrees C).
2. Place sherbet and yogurt in refrigerator to soften.
3. Spread 1/4 cup coconut on a baking sheet.
4. Bake in the preheated oven until lightly toasted, about 5 minutes.
5. In a microwave safe bowl melt 1/4 cup butter. Combine graham cracker crumbs and sugar with the melted butter. Press into the bottom of a 9 1/2 inch spring form pan or pie plate. Freeze for 15 minutes.
6. Spoon or scoop softened sherbets and yogurt into a bowl. Add l tablespoon lime juice. Stir gently to mix. Spoon mixture over graham cracker crust, evenly spread. Sprinkle with the toasted coconut, and press lightly. Freeze at least 4 hours before serving.
