Ingredients
2 | tomatoes |
600 g | salmon fillet, skinless |
2 | eggs |
salt and pepper, to taste | |
100 g | tender oat flakes |
2 tbsp | oil |
½ bunch(es) | parsley |
2 tbsp | butter |
4 slice(s) | lemon, to garnish |
Instructions
Dice the tomatoes. Wash the fish, pat dry and cut in slices. Whisk the eggs and season to taste with salt and pepper.
Turn the fish in the beaten eggs, then in the oat flakes. Heat oil in a large saucepan and fry the fish for 3-4 minutes until golden, turning once only.
Chop the parsley. Heat oil in a small pan and sauté the tomatoes for a minute, add the parsley and season to taste with salt.
Serve the fried salmon with the tomatoes. Garnish with parsley and lemon slices.
Goes well with mashed potatoes.
