Fried potatoes with asparagus salad recipe details
Ingredients
250 g | potatoes, peeled and sliced |
6 tbsp | lard |
1 | spring onions, sliced |
1 tbsp | white wine vinegar |
1 tbsp | oil |
salt and pepper | |
250 g | asparagus, cooked and sliced |
1 bunch(es) | chives, chopped |
Instructions
Sprinkle the potatoes with salt. In a pan, heat the lard and fry the potatoes over low heat from both sides until golden and done. Transfer onto some sheets of kitchen paper and gently pat dry with kitchen paper.Mix together the spring onion, vinegar and oil. Season with salt and pepper. Add the asparagus, toss and allow to marinate for 30 minutes.
Arrange the potatoes on serving plates and divide the asparagus on top. Serve garnished with chives.
