Ingredients
Serves: 4- 1 (3 1/2 pound) chicken, cut into 8 pieces
- Ice water
- Vegetable oil, for frying
- 2 cups beer
- 2 eggs
- 2 1/2 cups flour
- 1/4 cup cornstarch
- Salt and pepper
Preparation method
Prep: 25 mins | Cook: 30 mins1. Submerge chicken pieces in ice water for 30 minutes, then pour off the water and dry the chicken with paper towels. Sprinkle with salt and pepper.
2. Preheat at least 2 inches of oil in a deep fryer to 365 degrees F.
3. Make the batter: combine beer, eggs, 2 cups flour, cornstarch, and 1/2 teaspoon salt in a mixing bowl and beat until smooth. Pour the rest of the flour into a shallow pan.
4. Dip chicken in plain flour first, then beer batter. Fry each piece in the hot oil for about 10 minutes for the breasts and 15 minutes for other parts, turning often. Drain, salt, and serve.
