Fresh strawberry muffins details
- Ingredients:
- 1-1/2 cups flour
- 1/2 cup sugar
- 3/4 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg, slightly beaten
- 1/3 teaspoon almond extract
- 3/4 cup buttermilk
- 1/3 stick margarine, melted
- 1 cup chopped strawberries
- cinnamon/sugar mixture for topping
Preheat oven to 275 degrees. Mix together flour, sugar, baking powder, salt, and baking soda. In a separate bowl, beat together egg, almond extract, buttermilk, and margarine. Add strawberries and buttermilk mixture to dry ingredients. Mix until dry ingredients are just moistened. Fill oiled muffin tins 2/3 full. Top with cinnamon/sugar mixture. Bake 15 minutes or until tester comes out clean in the middle.
