Fresh beef stock recipe details
Ingredients
230 g | beef |
900 g | beef bones, cracked and chopped by butcher |
4 medium | carrots |
2 medium | onions |
4 medium | mushrooms |
2 stalks | celery |
1 medium | tomato |
1 medium | leek |
20 g | butter |
mixed herbs: | |
tyme | |
parsley | |
bay leaf | |
salt and pepper to taste |
Instructions
Chop meat and vegetables, except the onions, into chunks.Melt the butter in a large frying pan and fry everything together over a low heat. Stir from time to time until they have absorbed all fat and become dark brown.
Fry the onions in whole in their skins to give the stock a golden colour.
Add about 2 litres cold water and bring to the boil. Add salt, pepper and herbs and simmer, covered with a tilted lid, for 3 hours.
Sieve into a basin or another pot and when cold, remove the fat.
