French potato soup served cold recipe details
Ingredients
500 g | leeks, thinly sliced (white part only) |
6 medium | potatoes, thinky sliced |
1 large | onion(s) |
60 g | butter |
300 ml | chicken broth |
200 ml | light cream |
200 ml | milk |
150 ml | whipping cream |
some | chives, thinly sliced |
some | salt to taste |
Instructions
Cook leeks and onion in butter until tender, but make sure that they do not turn brown. Add potatoes, broth and season with salt to taste.Cook covered 35 to 40 minutes and then rub through fine sieve.
Return to heat, add milk and light cream. Bring to a boil and then cool.
Again rub through a fine sieve and when completely cold add whipping cream. Chill before serving and garnish with snipped chives.
