Chocolate strawberry ice cream recipe details
Nothing beats the combination of chocolate and fresh, ripe strawberries! Buy quality ingredients to make this from-scratch ice cream, and you’re going to have the best summer ever!
Ready in: 12 hours 35 mins
Ingredients
Makes: 8 cups- 1 quart fresh strawberries, hulled and sliced
- 1/4 cup white sugar
- 1 tablespoon fresh lemon juice
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup white sugar
- 1 pinch salt
- 6 egg yolks
- 1 teaspoon vanilla extract
- 8 ounces chocolate chips
Preparation method
Prep: 20 mins | Cook: 15 mins | Extra time: 12 hours, chilling1. Mash the strawberries with the lemon juice and 1/4 cup of sugar in a large bowl until only a few larger pieces remain. Cover, and refrigerate 1 hour.
2. Combine the cream, milk, 3/4 cup of sugar and salt in a saucepan over medium-high heat. Cook, stirring frequently until the cream is hot and begins to steam. Once hot, remove from the heat.
3. Combine the egg yolks and vanilla extract in a mixing bowl, and quickly whisk in about 2 tablespoons of the hot cream. When the egg yolks and cream are smooth, whisk in another 2 tablespoons until fully mixed. Continue whisking in 2 tablespoons of the cream at a time until you have added 1/3 of the cream.
4. Once you’ve stirred in 1/3 of the cream, whisk the egg mixture back into the cream in the saucepan. Cook over medium heat, stirring with a rubber scraper until the custard will stick to the back of a spoon. If you’re using a thermometer, cook the custard to 170 degrees F.
5. When the custard has cooked, scrape into the bowl of strawberries along with the chocolate chips. Refrigerate until cold, about 6 hours. You can refrigerate the mixture overnight if you are working ahead.
6. Once the custard has cooled, you’re ready to freeze the ice cream according to the directions on your ice cream maker. The ice cream will take about 30 minutes to an hour to freeze in the ice cream maker. Serve it right out of the machine if you like it very soft, or freeze for 6 hours to harden.
