250 ml | milk |
8 tbsp | sugar |
vanilla sugar |
Instructions
Beat the eggs with 3 tablespoons of sugar until frothy. Whisk in the milk until smooth and creamy. Stir in the vanilla sugar.Caramelize the remaining sugar in a small saucepan, stirring constantly. When the sugar is golden brown and liquid, remove from the heat and tilt the saucepan round, to coat bottom and sides evenly with the caramel.
Pour in the egg mixture, cover the saucepan tightly and cook in a water bath for about an hour.
When the centre starts to set, remove the flan from the oven and leave to cool completely. To serve, turn over onto a serving plate.
