Flaherty house plum sauce recipe details
- Ingredients:
- 1/2 peck (about 3 pounds) of Presidential plums, halved and seeded
- 1/8 teaspoon salt
- 1/4 teaspoon nutmeg
Place plums in a 3-quart saucepan. Cook on medium burner, stirring continuously until plums come to boil. Turn down burner to low. Continue stirring until juice thickens and skins are disintegrating (volume will reduce by 1/3). Remove from heat. Strain plums through food mill to remove skins and puree meat. Add salt and nutmeg. Adjust to taste. Can be frozen in small batches.
