Ingredients

700 g 650-700g total weight mixed fresh fish
2 tbsp flat-leafed parsley, chopped
425 ml White Sauce
450 g mashed potato
30 g butter
salt, to taste
fresh ground pepper, to taste
30 g butter
50 g Cheddar cheese, grated, for topping, optional

Instructions

Preheat oven to Gas Mark 5, 190°C, 375°F.

Place the fish on an oven tray and cook for about 10 minutes until the flesh is just opaque and beginning to flake. Allow to cool until it is comfortable to handle. Break up into flakes and large chunks, removing any bones found.

Mix in parsley, white sauce and any residual juices from the cooked fish, season well and place in a deep ovenproof dish.

Top with mashed potato and rake the surface with the prongs of a fork. Sprinkle on the cheese if wished and top with small pieces of butter.

Bake for 35-40 minutes until the top is golden-brown and hot. If the top is not piping hot, allow an extra 2-3 minutes.

Serve immediately with cooked green vegetables of choice.

About the recipe:
This cheat’s version uses some ready-made ingredients for convenience and speed, but you are welcome to use fresh, home-made alternatives should you wish. A Fisherman’s Pie usually contains about 60-75% mixed white fish (2-4 varieties is normal and may include cod, haddock, halibut, mackerel, herring etc, always filleted, sometimes skinned in advance but may be skinned once pre-cooked) and about 25-40% pink or red fish (usually salmon but can also include cooked prawns).
