Fish in prosciutto di parma with courgettes recipe details
Ingredients
2 tbsp | chopped almonds, roasted |
4 | fish fillets of your choice |
120 g | red bell pepper, grilled and sliced |
8 slice(s) | Prosciutto di Parma |
6 tbsp | olive oil |
600 g | courgette, sliced |
salt and freshly ground black pepper |
Instructions
Heat 3 tablespoons of oil and fry the wraps from both sides for 5 minutes over medium heat. Remove from the pan, cover and keep warm.
Heat the remaining oil. Add the courgettes and fry over medium heat until golden brown. Season with salt and pepper.
Arrange the courgettes on serving plates and place the fish wraps onto the vegetables. Sprinkle with the roasted almonds.
Serve with fried potatoes.
