Ingredients
Serves: 6- 2 cups cooked fish, flaked
- 1 cup mashed potatoes
- 3 tablespoons finely minced onion
- 2 tablespoons chopped fresh parsley
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Flour
- 2 tablespoons vegetable oil
Preparation method
Prep: 15 mins | Cook: 8 mins1. Stir fish, mashed potatoes, onion, parsley, egg, salt, and pepper together in a bowl. Shape into six 1-inch thick patties, then dust with flour.
2. Pour oil into a large skillet and set over medium-high heat. Cook fish cakes for about 8 minutes, flipping midway through cooking time, just until both sides are lightly browned. Serve.
