Fig honey cookies recipe details
Ingredients
250 g | dried figs |
100 g | sugar |
120 ml | honey |
80 g | shortening |
2 tbsp | milk |
2 medium | eggs, beaten |
270 g | flour |
3 tsp | baking powder |
40 g | shredded coconut |
1 tsp | lemon extract |
3 tbsp | chopped orange peel |
1 tbsp | dark rum |
Instructions
Preheat oven to 200°C.Place figs in a small saucepan. Cover with water and dark rum and allow to soak for 10 minutes.
Bring to a boil over medium heat, reduce heat and simmer for an additional 10 minutes. Drain and cool. Chop figs into small pieces abd set aside.
In a bowl, cream together the shortening and sugar, add eggs, honey and milk, mixing thoroughly. Add remaining ingredients, except figs, and stir to combine. Then stir in the figs last.
Drop by tablespoonfuls onto greased baking sheets and bake for 12-14 minutes.
