Feta cheese and mint rice recipe details
Ingredients
2 tbsp | olive oil |
1 small | onion, chopped |
160 g | rice |
500 ml | vegetable broth |
120 g | Feta cheese, crumbled |
3 tbsp | fresh mint, minced |
salt and pepper, to taste |
Instructions
Heat oil in a saucepan over low heat. Sauté onion until soft, about 5 minutes. Add rice and stir for a few seconds, then add broth and bring to a boil. Cook until broth is absorbed and rice is tender.In a bowl, combine ricem, feta and mint. Mix with fork. Season with salt and pepper and serve.
