Ingredients
500 ml | chicken stock |
500 g | fennel, cleaned, sliced |
1 clove(s) | garlic, minced |
2 tbsp | shallots, shopped |
1 tbsp | lemon juice |
1 pinch(es) | grated lemon zest |
½ tsp | dried dill |
1 tsp | coriander, ground |
1 l | natural yogurt |
Instructions
Cook the fennel in the chicken stock with the garlic and shallots until soft.
Combine with lemon juice, spices and grated zest in a blender and process until smooth.
Pour mixture into a serving bowl and combine with the yogurt. Toss well and then leave to chill. Serve garnished with chopped or ground coriander.
