Fennel risotto recipe details
Ingredients
100 g | freshly grated Parmesan cheese |
salt and pepper | |
3 tbsp | butter |
olive oil | |
400 g | risotto rice |
2 bulb(s) | fennel, sliced |
1 l | chicken stock |
½ | lemon, zest and juice |
4 clove(s) | garlic, chopped |
1 | onion, chopped |
Instructions
In a saucepan heat 1 tablespoon of the butter. Sauté garlic and onion until lucent. Add the rice and cook stirring for 2-3 minutes. Deglaze with a ladle of the stock and cook, stirring frequently, until the stock is soaked up. Add more stock and go on in the same way until all the stock is used up and the risotto is creamy and cooked.In a pan heat the oil. Sauté the fennel until golden. Season with salt and pepper. Add the fennel to the rice. Add the lemon juice and peel. Fold in half of the Parmesan cheese and the remaining butter. Season to taste with salt and pepper.
Serve sprinkled with the remaining cheese.
