Ingredients
500 g | carrots |
1 tbsp | olive oil |
1 medium | onion, chopped |
1 ½ l | vegetable broth |
1 tsp | dried fennel seeds |
Instructions
Cook onion and carrots in a pot in oil, covered, until tender, 15-20 minutes. Add stock and fennel and bring to a boil. Bring to a simmer over low heat and cook for 20 minutes.Strain through a sieve and process solids in a blender until smooth. Gradually add remaining broth until desired consistency.
