Ingredients

225 g plain flour
2 tsp mixed soice
1 tsp bicarbonate of soda
225 g wholemeal flour
175 g butter
225 g soft brown sugar
225 g sultanas
1 medium egg, beaten
300 ml milk
3 tbsp granulated sugar, for topping

Instructions

Butter and line an 8-inch, 20cm square cake tin. Preheat oven to gas Mark 3, 170°C, 325°F.

Sift plain flour with spice into a bowl and stir in wholemeal flour. Rub in the butter until the mixture resembles bread crumbs. Stir in sugar and sultanas. Add egg and milk and beat gently until well mixed and of soft dropping consistency. Add a little more milk if required.

Turn mixture into tin and bake for about 1 hour or until a skewer inserted into the centre comes out clean.

Allow to cool in tin for about 10 minutes and turn out onto wire rack to cool.
