Farmers omelette recipe details
Ingredients
3 | eggs |
70 g | bacon, finely chopped |
100 g | Cheddar cheese, grated |
1 small | onion, finely chopped |
½ | capsicum, green, finely chopped |
70 g | mushrooms, thinly sliced |
100 g | mixed vegetables, cooked and diced |
2 | tomatoes, skinned and coarsely chopped |
2 tbsp | butter |
70 ml | milk |
1 tsp | mixed dried herbs |
1 tsp | salt |
½ tsp | pepper, grounded |
Instructions
Melt butter in a frying pan and sauté the onions, capsicum and bacon until the vegetables are soft.Meanwhile beat the eggs, milk, herbs, salt and pepper together thoroughly.
Add the egg mixture to the pan and sprinkle with the cooked vegetables, chopped tomatoes and grated cheese.
Fry over medium heat until base is firm and the eggs are set.
