Ingredients
200 ml | milk and 2 tablespoons more |
salt and freshly ground black pepper | |
1 | egg |
1 | onion, chopped |
Tabasco sauce | |
3 tsp | basil pesto, green |
2 tbsp | crème fraîche |
100 g | flour |
1 clove(s) | garlic, minced |
2 tbsp | olive oil |
1 tbsp | tomato puree |
1 large can(s) | tomatoes |
500 ml | vegetable stock |
sugar | |
1 tsp | butter |
Instructions
In a bowl, mix together 200ml milk and the flour. Whisk in the egg. Season with salt and pepper. Allow to stand for 20 minutes.In a saucepan, heat the oil. Sauté the onion and the garlic. Stir in the tomato purée and cook stirring for a minute. Pour in the stock and the canned tomatoes and bring to a boil. Season with salt, pepper, sugar and Tabasco sauce. Simmer for 20 minutes. Purée the soup with a hand blender. Check seasoning and correct if necessary.
In a pan, heat half of the butter. Pour in half of the batter and fry the pancake until golden on both sides. Repeat with the remaining batter. Allow the pancakes to cool.
Spread each pancake with a teaspoon of the pesto and roll up tightly. Cut the pancake rolls into slices and thread the slices onto 4 skewers.
Mix 2 tablespoons of milk and the remaining pesto with the crème fraîche.
Ladle the soup into warmed soup bowls and garnish with the cream mixture. Serve the soup with the pancake skewers on top of the bowls.
