Fajita pasta recipe details
This easy weeknight dinner tastes good on tortilla chips or by itself.

Ingredients
Serves: 4- 2 cloves of garlic, rough chopped
- 2 bell peppers, sliced in strips
- 1 onion, sliced in strips
- 1 15 oz can pinto beans (or any kind you like)
- 1 15 oz can diced tomatos
- 1 packet of enchilada seasoning
- salt, pepper, red chili flakes to taste
- 1 cup salsa (choose your spiciness)
- 2 cups cooked rotini pasta (that’s 1 cup as raw pasta)
- 1 cup grated sharp cheddar cheese
- optional tortilla chips for serving with
Preparation method
Prep: 10 mins | Cook: 10 mins1. Put garlic, onion, and bell pepper in large a non-stick skillet and saute until starting to soften.
2. Dump beans, tomatoes, seasonings, salsa, and pasta into the skillet. Continue cooking and stirring until heated.
3. Top with cheese. Serve with tortilla chips if desired.Alternate method
You can definitely add some cooked steak or chicken strips, or even ground beef if you want.
