Ingredients

400 g turkey breast fillet
1 tbsp oil
salt and pepper
curry
1 kg broccoli
500 ml vegetable stock
200 g long grain rice
1 large can(s) apricot halves, approx. 250g
For the sauce:
150 ml apricot juice, out of the can
400 ml vegetable stock
1 tbsp flour
100 g single cream
curry
100 g grated cheese (Cheddar or Gouda)

Instructions

Rinse the turkey breast with cold water, pat dry and cut in stripes. Heat oil in a skillet and sear the meat from all sides. Season with salt, pepper and curry. Remove from the skillet and set aside.

Cut the broccoli into florets and the stem in small pieces. Wash and drain. Bring the vegetable stock to the boil, add the broccoli and simmer for 5 minutes until done, but still a bit firm to the bite. Drain, however collect 400ml of the vegetable stock.

Preheat the oven to 180°C.

Precook the rice in boiling salted water for approximately 8 minutes. Drain. Also drain the apricots and collect 150 ml of the juice. Cut the apricots in quarters.

For the sauce:
Add the apricot juice and the 400 ml vegetable stock to the juices in the skillet. Bring to the boil. In a bowl mix the single cream and the flour. Add to the sauce and cook for 2 minutes. Season to taste with salt, pepper and curry. Stir in half of cheese.

To finish:
Arrange the meat, rice, broccoli and apricots in a shallow casserole dish. Evenly divide the sauce on top, sprinkle with cheese and bake in the preheated oven for approximately 30 minutes.
