Elderberry ice cream recipe details
Ingredients
2 tbsp | lemon juice |
400 g | whipping cream |
2 tbsp | vanilla sugar |
500 g | elderberry |
125 ml | soft red wine |
1 | lemon, juice and grated peel |
1 stick(s) | cinnamon |
2 | cloves |

Instructions
Place the cinnamon and the cloves into an egg ball.In a saucepan, bring the wine with elderberries, lemon zest, cinnamon and cloves to a boil. Season to taste with sugar. Reduce the heat and simmer for 10 minutes. Remove the egg ball with the spices.
Allow the mixture to cool down completely. Purée the mixture. Season to taste with lemon juice. Whisk the cream with the vanilla sugar until stiff and fold in.
Pour the mixture into forms and cover with foil. Freeze for 4 hours before serving.
