Eggs dijonaise recipe details
- Ingredients:
- 10 hard-boiled eggs, peeled and cut in rough chunks
- 1/2 cup (or more) mayonnaise
- 2 Tablespoons Dijon mustard (or to taste)
- 2 teaspoons maple syrup (or to taste)
- White pepper to taste
- 6 English muffins, split and lightly toasted
- Fresh spinach leaves
- Thin slices of ham
- 4 ounces shredded cheddar cheese
Combine eggs, mayonnaise, mustard, syrup, and white pepper; mix together to make a thick, chunky sauce. Place spinach and/or ham onto muffins. Pile about 1/2 cup egg mixture on each muffin, then top with cheese. Bake at 400 degrees for 10 minutes or until heated through.
Hint: I use 1 for women, 2 for men…sexist, but it works.
