Eggplant chicken tagine recipe details
Ingredients

3 | eggplants |
3 clove(s) | garlic, chopped |
1 | onion, chopped |
2 | red chilies |
1 tbsp | cinnamon |
salt and pepper | |
paprika powder | |
2 tsp | ground cumin |
4 | tomatoes, chopped |
4 tbsp | tomato puree |
200 ml | chicken broth |
5 | limes |
1 tsp | ground coriander |
some | oil |
Instructions
Soak the limes in cold water. Season the chicken pieces with salt, pepper and paprika.Heat some oil in a wide pan and fry the chicken until golden brown. Set aside.
Now cut the eggplants lengthwise into quarters and then cut those quarters into 4 cm long pieces. Mix them with the cinnamon and fry in the remaining oil; you might have to add some more oil. Set aside.
Now fry the chopped garlic, chilies and onion. Add all of this to the Crock-pot/Slow-cooker. Now stir in the chopped tomatoes, the chicken broth, cumin and tomato puree. Cover and put either on high for approximately 4 hours or on low for approximately 6 hours.
Cut the soaked limes into small wedges and remove the seeds. 1 hour before end add the coriander and the lime wedges.
Serve with white rice. The limes give the tagine a distinctive taste.
