Ingredients

3 medium eggs
1  big eggplant or two small ones
8  mushrooms
  salt
  pepper
  rosemary
  paprika
 some whipping cream
 some olive oil


Instructions

Cut the eggplant and the mushrooms in small pieces. Fry them in a little olive oil until soft.

Mix the eggs with the seasoning and a little whipping cream. Pour over the vegetables.

Let it cook until the egg mixture has set, then cover the pan with a plate and turn over.

Slip the frittata back into the pan and fry for a little longer. Serve warm.
