Eggless breakfast recipe details
Simple breakfast, like an omelet but with the eggs substituted for haloumi. Haloumi browns on the outside and doesnt melt, allowing you to mix it with ingredients in the frying pan. Don’t be put off by its slightly rubbery texture – it is supposed to be like that and the taste is well worth it. Can be served on toast, or by itself. The haloumi is a good substitute for those who dont like eggs, and tastes good enough for those who do.

Ingredients
Serves: 2- 1 tablespoon olive oil, or as needed
- 6 tomatoes, diced
- 5 shallots, diced
- 4 slices bacon, sliced
- 1 (6 ounce) block haloumi, cut into cubes (type of cheese from Cyprus)
Preparation method
Prep: 5 mins | Cook: 10 mins1. Heat olive oil in a pan. Add bacon, tomatoes, and shallots. Season tomatoes with salt and pepper while cooking. Cook until tomatoes are soft and bacon and shallots are browning. Add haloumi and cook until it is brown on both sides. Take off heat.
