Ingredients

For the Crust:
350 g flour
230 g butter
80 g caster sugar
1 medium egg, beaten
For the Filling:
3 medium eggs
80 g caster sugar
70 ml milk
240 ml water

Instructions

Preheat oven at 180°C.

In a bowl combine butter, sugar and egg. Beat until creamy. Add flour and mix into a dough. Cover dough with cling film and keep in the fridge for 30 minutes.

Cut small 20g pieces out of the dough. Press into egg tart moulds and set aside.

In a separate bowl whisk eggs and sugar until creamy. Add milk and water and continue to whisk until combined. Pour into tart moulds and bake for 25 minutes or until the crust is slightly brown and egg custard is set.

Remove from oven and leave to cool slightly before serving.
