Egg and potato soup recipe details
Ingredients
4 | potatoes, peeled, chopped |
1 large | onion, chopped |
1.2 l | water |
3 tbsp | olive oil |
4 medium | eggs |
salt and pepper, to taste |
Instructions
Heat oil in a large pot over low heat and sauté onions until tender. Add water and chopped potatoes. Season with salt and pepper. Bring to a boil and then reduce heat to low. Simmer for 20 minutes or until potatoes are tender.Remove from heat and crack eggs into soup. Place on low heat until whites of eggs are cooked. Cool slightly before serving.
