This black bean chili is simple, but packed with flavor. A mix of veggies and spices combine with the beans for a great winter day meal.

Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 red bell pepper, seeded and chopped
- 2 jalapeno peppers, seeded and chopped
- 2 cloves garlic, chopped
- 1 (28 ounce) can chopped tomatoes
- 2 (15 ounce) cans black beans, rinsed and drained
- 1 1/2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
Preparation method
Prep: 15 mins | Cook: 50 mins
1. Pour the olive oil in a large soup pot. Heat the oil over medium high heat. Add the onion, carrots, bell pepper, jalapeno, and garlic. Cook for about 5 minutes.
2. Put in the remaining ingredients, stir, and turn heat to high. When the mixture begins to boil, turn heat back to low. Simmer over low heat for 45 minutes and serve.
