A very simple recipe for filleted tilapia and fresh vegetables. Don’t need a full oven for this baby, make it in your toaster oven.

Ingredients

Serves: 4

• 4 (4 ounce) fillets tilapia
• 4 teaspoons olive oil
• 1/2 teaspoon lemon pepper or other spice mix such as Old Bay Seasoning(TM)
• 1 teaspoon crushed garlic
• 1 lemon, sliced
• 1 (16 ounce) package fresh mixed vegetables of your choice chopped into small pieces

Preparation method

Prep: 5 mins | Cook: 40 mins

1. Preheat toaster oven to 350 degrees F. Coat an 8×8-inch baking dish with nonstick cooking spray.
2. Brush tilapia with oil, then season with lemon pepper and garlic.
3. Place in dish and arrange lemon slices on the fillets.
4. Scatter vegetables around the fillets.
5. Cover dish with foil.
6. Bake for 30 minutes, then remove foil and bake another 10 minutes to brown.
