Easter sponge cake cookies recipe details
Ingredients
4 medium | eggs |
170 g | shortening |
130 g | sugar |
1 tbsp | vanilla extract |
400 g | flour |
5 tsp | baking powder |
For the Icing: | |
2 medium | eggs, whites only |
4 tbsp | butter, melted |
500 g | confectioners’ sugar |
Instructions
Combine shortening and sugar and mix until combined. Add eggs, one at a time, and vanilla. Blend in half of the flour and the baking powder. Beat to mix. Then add the remaining flour, beating until stiff.Preheat oven to 170°C.
Drop by teaspoonfuls onto greased cookie sheet and bake at 375 degrees 10 – 12 minutes.
Icing:
Beat egg whites until stiff, add butter, then blend in sugar. Ice cookies while warm.
