Easter fruitcake recipe details
Ingredients
5 medium | eggs |
230 g | butter |
200 g | sugar |
180 g | flour |
½ tsp | baking powder |
150 g | cherries, canned |
300 g | pineapple, canned |
200 g | pecans |
15 ml | vanilla extract |
15 ml | lemon extract |
Instructions
In a bowl combine butter, sugar and eggs. Beat until creamy.Chop nuts and fruit into fine pieces and mix with a little bit of flour.
Sift remaining flour and baking powder together. Fold flour into creamed mixture, add vanilla and lemon extract and mix well. Fold in nuts and fruit and mix again.
Pour mixture into greased and floured tube pan. Place in cold oven and bake at 180°C for 1 hour.
