Easter Cheesecake recipe

|1 tbsp||butter, softened|
|1 kg||cream cheese|
|120 ml||whipping cream|
|4 large||eggs, beaten|
|grated zest of 1 lemon|
|grated zest of 1 orange|
|1 tsp||vanilla extract|
Preheat oven to 170°C. Grease a round cake pan and set aside.
In a bowl, beat cream cheese, cream and sugar until smooth. Add eggs, and beat until incorporated. Add zests and vanilla.
Pour into prepared pan, and place in a large roasting pan. Add enough boiling water to the roasting pan to come two-thirds up the side of the cake pan.
Bake until firm, about 2 hours. Turn off the oven but leave cake inside to cool and keep the oven door ajar.
Transfer to refrigerator and chill overnight.
