Easy breakfast burritos that cook up quick. Spend a little time chopping and you’re only 15 minutes away from a terrific, spicy start to the day.

Ingredients

Serves: 4
  • 3 eggs
  • 4 egg whites
  • 1 tablespoon milk
  • Salt and pepper
  • 1 teaspoon vegetable oil
  • 1/2 onion, finely chopped
  • 1/2 small red bell pepper, finely chopped
  • 1 jalapeno pepper, seeds removed, finely chopped
  • 4 tomatoes, finely chopped
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon ground cumin
  • 4 (8-inch) flour tortillas
  • 1/2 cup shredded cheese

Preparation method

Prep: 10 mins | Cook: 15 mins

1. Beat eggs with egg whites and milk in a bowl; season with salt and pepper.
2. Pour vegetable oil into a skillet and set over medium-high heat. Add onion, bell pepper, and jalapeno pepper and cook for about 6 minutes, until softened.
3. Stir tomatoes, oregano, and cumin into the onions and peppers. Bring to a bowl and cook for about 4 more minutes, then turn heat down to medium-low and add eggs.
4. Cook and stir for about 4 minutes, until eggs set. Fill tortillas with the mixture, top with cheese, and roll up like burritos. Serve.
