Chicken flavored with lime, topped with peppers and onions on pre-baked pizza crust for an easy dinner.

Ingredients
Serves: 4
- 1/4 cup lime juice
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 pound boneless, skinless chicken breasts, coarsely chopped
- 1 (14 ounce) prebaked Italian bread shell pizza crust, such as Boboli(R)
- 1 (16 ounce) jar chunky salsa, drained
- 1 small red bell pepper, chopped
- 1/4 cup chopped green bell pepper
- 1 green onion (a.k.a. scallion), chopped
- 1 1/2 cups shredded Monterey Jack cheese
Preparation method
Prep: 15 mins | Cook: 10 mins | Extra time: 15 mins, marinating
1. Pour lime juice, 2 tablespoons olive oil, and garlic into a shallow pie pan. Add chopped chicken, toss to coat, and cover with plastic wrap. Place in refrigerator to marinate for 15 minutes, then drain.
2. Pour 1 tablespoon oil into a large skillet and set over medium heat. Add marinated chicken and cook, stirring, until chicken is cooked through–about 5 minutes.
3. Preheat oven to 450 degrees F.
4. Drizzle salsa over prebaked crust and set on a baking sheet. Top with cooked chicken, bell peppers, chopped green onion, and Monterey Jack cheese.
5. Bake for about 10 minutes to heat through and melt the cheese. Slice into wedges and serve.
