Ingredients
Serves: 5- 2 cups penne pasta, cooked according to directions on box
- 1/4 cup butter
- 1 onion, chopped
- 1/4 cup flour
- 1 (14 1/2 ounce) can chicken broth
- 3 cups cubed rotisserie chicken
- 1 (7 1/2 ounce) jar marinated quartered artichoke hearts, drained
- 1 cup crumbled feta cheese
- 1/2 cup chopped oil-packed sun-dried tomatoes
- 1/3 cup sliced pitted Kalamata olives
Preparation method
Prep: 10 mins | Cook: 15 mins1. Preheat broiler to High.
2. Melt butter in a Dutch oven or ovenproof skillet. Saute onion in hot butter for about 5 minutes, then add flour. Stir in the chicken broth and bring everything to a boil, simmering for 2 minutes.
3. Add chicken, artichoke hearts, cheese, tomatoes, and olives to the mixture. Toss with pasta. Place Dutch oven under broiler for about 7 minutes to brown, then serve.
