fresh damsons, ripe and flawless | |
cognac, an ordinary brand will do |
Instructions
Spread the damsons on a lined baking tray or onto the drying trays of a food dehydrator. Dry until the fruits are very soft, but not wizened.Prick each damson several times with a needle and place them into a wide glass with screw cap. Cover completely with the cognac and leave in a dark place for at least 6 weeks before serving.
Serve the soaked damsons with pancakes or vanilla ice cream. Enjoy every now and then a shotglass of the cognac, it has turned into an exquisite digestif.
