Dragonfly fritatta recipe details
- Ingredients:
- 1/2 large onion
- 1 medium red pepper
- 2 Tablespoons roasted green chile
- 1 clove garlic
- 3 to 4 medium potatoes
- 1 to 2 Tablespoons olive oil
- 8 eggs
- 1/4 cup milk
- 1/4 cup cheddar cheese
- 1 Tablespoon grated Parmesan cheese
- Salt and pepper
Chop onions, red pepper, and garlic. Set aside. Dice potatoes and saute in olive oil. After potatoes have cooked for 10 minutes, add both the green chili and the red pepper and cook for 5 more minutes, then add onions and garlic. Cook mixture for 3 minutes or until onions become transparent. Spray 9 x 9-inch square casserole dish with non-stick cooking spray. Pour sauteed vegetables into casserole dish. Beat eggs with milk; pour mixture over vegetables. Salt and pepper to taste. Top with cheese. Bake at 400 degrees for 20 to 25 minutes.
