Currant bran bread details
- Ingredients
- 7 ounces unbleached white organic flour
- 2 ounces organic bran
- 5 ounces sucanat (granulated cane juice)
- 2 Tablespoons aluminum-free baking powder
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/4 teaspoon salt
- 3 ounces currants
- 3/4 cup unsweetened applesauce
- 1 cup low-fat buttermilk
- 1 Tablespoon lemon juice
Preheat oven to 350 degrees. Combine dry ingredients. Mix together applesauce and buttermilk plus lemon juice. Add to dry ingredients. Cook for 1 hour in and 8-inch square pan, sprayed or greased.
