7 ounces unbleached white organic flour
2 ounces organic bran
5 ounces sucanat (granulated cane juice)
2 Tablespoons aluminum-free baking powder
1 teaspoon baking soda
3 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon salt
3 ounces currants
3/4 cup unsweetened applesauce
1 cup low-fat buttermilk
1 Tablespoon lemon juice


Preheat oven to 350 degrees. Combine dry ingredients. Mix together applesauce and buttermilk plus lemon juice. Add to dry ingredients. Cook for 1 hour in and 8-inch square pan, sprayed or greased.
