Ingredients

100 g butter
200 g sugar
2 tsp vanilla extract
4  eggs
½  lemon, grated rind
1 pinch(es) salt
1 kg curd cheese
200 g semolina
2 packet(s) custard powder, vanilla flavoured, for 1/2l each
2 tsp baking powder
1 kg cooking apples, e.g. Braeburn
1 tsp lemon juice
60 g raisins
50 g sunflower seeds
2 tbsp cinnamon and sugar mix
60 g butter

Instructions

Whisk the butter until creamy. Bit by bit stir in the sugar, the vanilla extract, the eggs, the lemon rind, a pinch of salt and the curd cheese.

Combine the custard powder with the semolina and the baking powder. Gently fold the dry ingredients into the curd cheese mixture.

Preheat the oven to 180°C.

Peel, quarter, core and dice the apples. Fold the apples and the raisins into the curd cheese mixture. Transfer the mixture into a greased shallow casserole dish and flatten. Sprinkle with cinnamon and sugar mixture and with the sunflower seeds. Divide the butter flakes on top. Transfer the casserole dish into the preheated oven and bake for 60 minutes.

Serve still warm.
