Cucumber Curry recipe
Ingredients
1 | dark yellow cucumbers, (Dossakai), washed, peeled, diced |
½ tsp | ginger garlic paste |
1 | green chili, chopped |
2 medium | tomatoes, diced |
1 medium | onion, chopped |
¼ tsp | mustard |
½ tsp | cumin seeds |
1 tsp | red chili powder |
6 | curry leaves |
4 | coriander leaves |
2 tbsp | olive oil |
salt, to taste |
Instructions
Heat oil in a sauce pan and cook mustard, cumin and curry leaves until toasted.
Add onion, chilies and ginger garlic paste and sauté until brown.
Add chopped tomatoes and cook until they are soft.
Add dry seasoning together with the diced cucumber, close the pan with a lid and cook for 5-8 minutes. Serve with hot rice.
