Ingredients

1 kg pork leg, boned but skin on
2 clove(s) garlic, minced
2  spring onions, finely chopped
1 tsp sugar
4 tbsp light soy sauce
1 tsp roasted sesame oil
1 tsp chili oil

Instructions

Tie up the pork leg like a parcel to hold its shape. Place into a large saucepan with boiling water, return to the boil and skim off any scum. Cover and simmer for 1 hour.

Turn off the heat and allow the pork to cool completely in the water, leaving the lid on the saucepan. Once cool enough, place the saucepan into the fridge. When cold, remove the pork from the liquid and drain, skin side up, for 3 hours.

Cut off the skin, leaving a thin layer of fat. Cut the pork into thin slices. In a small bowl, combine the remaining ingredients and serve the dip with the pork.
