Creamy vegetable beef soup recipe details
Ingredients
250 g | minced beef |
1 | greed bell pepper |
2 medium | onions, chopped |
200 g | potatoes, peeled, diced |
2 tsp | olive oil |
240 ml | tomato juice |
4 | carrots, chopped |
500 ml | milk |
2 tbsp | butter |
2 tbsp | flour |
salt, to taste |
Instructions
Heat olive oil in a skillet over medium heat; sauté bell pepper and chopped onion until soft. Add beef and cook, stirring, until browned. Drain off excess fat. Add tomato juice, potatoes, carrots and salt. Cover and simmer 20-30 minutes.Melt butter in a saucepan over low heat and blend in flour until smooth. Stir in milk and cook, stirring constantly, until thickened.
Add sauce to beef and vegetable mixture in the skillet. Heat through and serve.
