Creamy mushroom risotto recipe details
Ingredients
300 g | Arborio rice or other risotoo rice |
25 g | dried mixed mushrooms |
1 medium | onion, finely chopped |
900 ml | vegetable stock or chicken stock (maybe prepared with stock cubes) |
100 ml | white wine (optional) |
2 tbsp | cream cheese (Boursin with garlic and herbs) |
2 tbsp | freshly grated Parmesan cheese, or more if you like |
handful | fresh parsley, finely chopped |
2 tbsp | butter |
1 tbsp | olive oil |
salt and pepper, to taste |
Instructions
Bring the stock to a boil (or water with stock cubes), then pour the stock over the mushrooms and allow to soak for approximately 20 minutes.Heat the oil and butter in a pan over a medium heat. When the butter has melted sauté the onions. Once softened add the rice, stir for a couple of minutes and make sure it doesn’t stick to the pan.
When the mushrooms have softened, pour the stock with the mushrooms slowly over the rice while stirring. Add the wine if using. Bring to the boil, then let it simmer for 20 minutes or until all liquid is soaked up. Stir continuously to free any grains from sticking to the saucepan. If too sticky, add a few tablespoons of water.
Stir in the fresh parsley and the cheeses. Season to taste with salt and pepper and serve immediately.
